A perfect rosetta takes about four seconds to pour — and roughly four weeks of daily practice to learn. But latte art is far more than decoration. A well-poured rosetta or tulip is proof that the milk was textured correctly, that temperature was controlled precisely, and that espresso and foam are in balance. It is the signature of quality in every cup.
In our Latte Art Masterclass, we go beyond surface-level techniques. Over 2.5 hands-on hours at our Basel location, you will learn the science, develop the muscle memory, and leave with the skills to pour beautifully at home or behind a professional bar.
Why Latte Art Matters More Than You Think
A common misconception is that latte art is purely aesthetic. In reality, the quality of your pour tells you everything about your milk preparation. Uneven foam, large bubbles, or a flat white surface all indicate problems with texture, temperature, or technique.
When your microfoam is right — silky, glossy, and free of visible bubbles — the art follows naturally. That is why we start with the science before picking up a pitcher.
The Science of Microfoam
Microfoam is the foundation of all latte art. Understanding what happens inside the pitcher changes everything about how you steam milk.
- Temperature control: Milk proteins begin to denature above 68°C. We teach you to steam between 55–65°C for optimal sweetness and texture stability.
- Protein structure: Whey proteins (especially beta-lactoglobulin) unfold during steaming and stabilise air bubbles. This is why fresh, cold milk produces better foam.
- Fat content: Full-fat milk (3.5%+) creates creamier, more forgiving microfoam. We explore how different fat levels affect flow and design definition.
- Fluid dynamics: The vortex you create in the pitcher is not random. Proper positioning of the steam wand tip controls both air incorporation and circulation speed.
Casein vs Whey: The Two Proteins That Make Latte Art Possible
Milk contains two main protein families, and each plays a distinct role in microfoam. Casein makes up about 80% of milk protein and forms micelles — tiny clusters that give milk its white colour and body. During steaming, casein provides structural stability to the foam, preventing bubbles from merging and collapsing. Whey proteins, particularly beta-lactoglobulin, are the real foam builders. As heat unfolds their molecular structure, they migrate to the surface of air bubbles and form an elastic film around each one. This is why overheating destroys latte art: above 68°C, whey proteins denature completely, lose their elasticity, and the foam becomes stiff, dry, and impossible to pour through.
Why Cold Milk From the Fridge Works Best
Always start with milk straight from the fridge at around 4°C. Cold milk gives you a longer steaming window — more time between the start of steaming and the 65°C target. That extra time matters because it lets you incorporate air gradually during the stretching phase and then fully texturise the foam during the rolling phase. If you start with room-temperature milk, the window shrinks dramatically, and you end up with either too little foam or foam that is not integrated properly.
Lactose and Sweetness Perception
Lactose, the natural sugar in milk, becomes noticeably sweeter as milk is heated — but only up to a point. Between 55–65°C, lactose dissolves more readily and interacts with your taste receptors at peak efficiency. Push past 70°C and the Maillard reaction kicks in, producing a cooked, slightly sulphuric taste that flattens sweetness. This is why properly steamed milk tastes naturally sweet without any added sugar, and why burnt milk tastes thin and unpleasant.
Plant Milks: How They Compare for Latte Art
Not all milks foam equally. Plant milks lack casein and whey entirely, so they rely on different proteins and stabilisers for foam structure.
- Oat milk is the best plant alternative for latte art. Its beta-glucan content creates a naturally creamy texture, and barista-edition oat milks include added oils and acidity regulators that mimic the foaming behaviour of whole milk. It pours with good flow and holds designs well.
- Soy milk foams reliably due to its high protein content, but it can curdle when it contacts acidic espresso if the temperature is too high. Keep soy milk under 60°C and pour immediately.
- Almond milk is the most challenging. Its low protein content means thin, unstable foam that dissipates quickly. Barista-grade versions improve this, but even so, almond milk gives you a very short window to complete your pour.
In the masterclass, we primarily work with whole milk, but we dedicate time to oat milk practice so you can pour confidently with the most popular plant alternative.
Steaming Technique: A Step-by-Step Breakdown
Good latte art begins before you touch the pitcher to the cup. Here is the steaming process we teach, step by step.
- Fill the pitcher correctly. Fill to just below the base of the spout — roughly one-third full for a 350ml pitcher. Too much milk and you have no room for expansion. Too little and it heats too fast.
- Position the steam wand. Place the tip just below the surface of the milk, slightly off-centre. The wand should point toward the 2 o'clock position (if you are right-handed) to create a natural vortex.
- The stretching phase (0–5 seconds). Lower the pitcher slightly so the tip sits right at the surface. You should hear a sharp, rhythmic "tss-tss-tss" — what baristas call the "paper tearing" sound. This is air being pulled into the milk. If you hear screaming, the tip is too high. If you hear nothing, it is too deep. Three to five seconds of stretching is usually enough for a flat white or latte.
- The texturing phase (5 seconds to finish). Raise the pitcher so the tip is submerged about 1cm below the surface. The paper-tearing sound should stop completely. Now the vortex is rolling the milk, breaking down large bubbles into microbubbles and distributing heat evenly. Keep the vortex spinning until the base of the pitcher feels warm but not hot to touch — roughly 55–60°C.
- Visual cues for done. When the milk surface looks like wet white paint — glossy, with no visible bubbles — you are done. If you can see individual bubbles on the surface, give the pitcher a firm tap on the counter and a quick swirl. The surface should heal into a smooth, reflective sheen.
We practise this sequence repeatedly during the masterclass. Most participants nail the technique within their first ten attempts.
Designs You Will Learn
We teach three foundational designs that form the basis of all competition-level latte art:
The Heart
The heart is where every latte artist starts. It teaches you the two fundamental motions: the steady pour and the cut-through.
- Begin pouring from about 3cm above the cup, aiming for the centre. This height lets the milk dive beneath the crema and build a white base.
- When the cup is about two-thirds full, lower the pitcher spout close to the surface. The milk will now float on top, forming a white circle.
- Continue pouring steadily to grow the circle, then execute the push-through-and-cut: accelerate your pour slightly while drawing the pitcher forward through the centre of the circle in one smooth motion. This pulls the white shape into a heart point.
The heart teaches flow rate control, pitcher height awareness, and the confidence to commit to the final cut — skills that every other design builds on.
The Tulip
The tulip introduces layering. Instead of one continuous pour, you create distinct lobes by pausing and restarting.
- Pour your first lobe as you would a heart — lower the pitcher, let a white circle form.
- Pause briefly (about half a second), raise the pitcher slightly, then push forward through the first lobe to nudge it toward the far side of the cup.
- Lower the pitcher again and pour a second lobe behind the first. The pause timing is critical — too long and the layers separate with visible gaps, too short and they merge into a blob.
- Repeat for three to five layers, then finish with a cut-through to create the stem.
Symmetry is everything in a tulip. We teach you to keep your pour centred and your pauses consistent so each layer nests cleanly inside the previous one.
The Rosetta
The rosetta — the classic fern pattern — is the most technically demanding of the three. It requires coordinating three simultaneous movements: a side-to-side wrist wiggle, a steady pull-back, and a consistent flow rate.
- After building your white base, lower the pitcher and begin a rapid wrist wiggle — small oscillations at roughly 3–4 movements per second. The frequency matters: too slow produces wide, blobby leaves, too fast produces thin lines that disappear.
- While wiggling, slowly pull the pitcher back toward you. The speed of your pull-back determines the spacing between leaves. Move too fast and you get two or three lonely leaves; too slow and they stack on top of each other.
- When you reach the near edge of the cup, stop wiggling and draw a thin line forward through the centre to create the stem.
The rosetta typically takes the most practice. Most participants achieve a recognisable rosetta by the end of the session, though truly symmetrical ones take weeks of daily practice.
Each design is broken down step by step. You will practise on real espresso shots until the movements become intuitive.
Common Mistakes and How to Fix Them
After teaching hundreds of latte art sessions, we see the same mistakes come up again and again. Here are the most common ones and how to correct them.
- Overheating the milk. If the pitcher is too hot to hold, you have gone past 70°C. The foam becomes dry and grainy, and it will not flow. Fix: use a thermometer until you develop the hand-feel instinct. Stop steaming when the pitcher feels uncomfortably warm, not hot.
- Too many large bubbles. This happens when the steam wand tip is too high during stretching, pulling in too much air too fast. Fix: keep the tip barely at the surface — you want the paper-tearing sound, not a gurgling roar. If bubbles appear, tap the pitcher sharply on the counter and swirl.
- Pouring from too high. Holding the pitcher 10cm above the cup forces the milk to dive under the crema instead of floating on top. You get a brown cup with no visible art. Fix: once you are ready to draw, bring the spout within 1cm of the surface. The closer you pour, the more the milk sits on top.
- Wrong pitcher angle. Tilting the pitcher too far forward dumps milk too fast. Not tilting enough gives you a weak, hesitant flow that breaks the design. Fix: tilt the cup toward you at about 20 degrees and rest the spout against the rim of the cup for stability. Let gravity help.
- Starting the pour too late. If you wait until the cup is nearly full before lowering the pitcher, you have no room left for the design to develop. Fix: begin your design when the cup is about half to two-thirds full. You need enough liquid depth for contrast but enough remaining capacity for the art to spread.
- Inconsistent flow rate. Speeding up or slowing down mid-pour causes uneven shapes — one side of the rosetta wider than the other, or tulip layers of different sizes. Fix: practise pouring water from pitcher to cup at a steady rate. It is a forearm muscle you need to train.

What to Expect During the 2.5 Hours
This is a hands-on workshop — you will spend the majority of the time at the machine, not watching from a distance.
- First 30 minutes: Milk science theory and steaming demonstration
- Next 90 minutes: Guided practice on all three designs with individual feedback
- Final 30 minutes: Free practice, Q&A, and tips for continuing at home
Group sizes are kept small so every participant gets personal attention and plenty of machine time.
Practising at Home
You do not need a commercial machine to keep improving. Here are tips we share during the workshop:
- Use a French press to practise frothing milk without an espresso machine
- Pour into a cup of diluted food colouring or tea to simulate espresso contrast
- Focus on one design at a time — master the heart before moving to tulips
- Film your pours from above. Reviewing footage reveals timing issues you cannot feel in the moment
- Steam milk daily, even just water with a drop of dish soap, to build wrist memory

No prior latte art experience is required. We start from the fundamentals and adapt to each participant's level.
Frequently Asked Questions
Can I learn latte art with plant milk?
Absolutely. We dedicate part of the session to oat milk, which is the best plant-based option for latte art. The foaming technique is slightly different — you need a shorter stretching phase and lower temperatures — but the pouring mechanics are the same. If you exclusively use plant milk at home, let us know when you arrive and we will adjust your practice time accordingly.
Do I need to bring my own machine or equipment?
No. We provide everything: professional espresso machines, grinders, pitchers, milk, and espresso. Just bring yourself and comfortable shoes — you will be standing for most of the session. If you want recommendations for home equipment afterward, we are happy to advise during the Q&A portion.
What if I am left-handed?
No problem at all. Latte art technique adapts naturally to left-handed pouring. The steam wand positioning mirrors to the opposite side, and the wrist movements are identical. We have taught many left-handed students and adjust our demonstrations accordingly. Some baristas even argue that left-handers have an advantage with rosetta wrist control.
How long does it take to master a rosetta?
Most people can pour a recognisable rosetta by the end of the 2.5-hour session. A consistently symmetrical, competition-quality rosetta typically takes four to six weeks of daily practice at home — roughly 10–15 minutes per day. The key is repetition: the wrist movement needs to become automatic so you can focus on flow rate and positioning instead of thinking about the wiggle.
Can I practise latte art without an espresso machine?
Yes. You can heat milk on the stove or in a microwave and froth it with a French press or handheld milk frother. Pour into strongly brewed tea, instant coffee, or water with a few drops of dark food colouring. The contrast will not be as sharp as real espresso crema, but it is enough to practise your pouring patterns and build muscle memory. Many of our students improved significantly using this method between sessions.
